2 hours in...plenty of time for a full 4.5-5hrs before the party...
-225 dome, 200 rib-level
-CWM method (mustard, dizzy dust rub)
-cherry and apple (chips unfortunately, need to find some chunks but got a good first hour smoke)

5 hours in... to pull or not to pull??? They bend somewhat but not "easily"...bones have pulled back but not enough in my opinion...gonna let em go 5.5...wish me luck!

I don't know why, but my ribs never bend very much. Use a fork or tooth pick and check the meat in the rack. You will be able to tell if it is tender or not.
If it is pull and enjoy. Also, cooks treat, eat some You don't want them being overcooked and going dry.
