Today's cook, two boston pork butts one 7lbs and one 8lbs, on at 8am shuld both be ready for dinner at 4pm at latest.

You think those will be done and ready to pull in 8 hours?
Are you cooking them at a high temp? -
Feels like a tall order. I put on a 6 lb'er on at 5am with the hopes that it would be done by 5pm, pulled and ready to eat at 7.

Gonna hafta put 'em on at 300 or better for a 1 hr/lb cook. Those should have have been started 12 hours sooner.

Did A very similar cook last weekend, Took twice as long as you are proposing. 16 hours. Let us know how they come out.

Danny you are kidding aren't you. If you get those done in 8hrs I want to know the secret. 8 pounders go app rox. 18hrs for me @240 dome. good luck.

I know you guys dont believe me but i have never gone over 1 hr per lb. i cook at 250 dome until 200 internal with a DigiQII, internal temp is up to 194 at this time

temp is now 200 in 4 hrs

I put on three 4.5 pounders at 9am and just pulled them at 180--cooked at 250 the entire time...

Something's weird here. Next time you do a cook with your DQII, can you cross-check your dome probe with another thermo?

i have allready rechecked everything in boiling water, all is well here, i guess i am just getting very lean meat. i have cooked at least 20 of the butts and none of them went over an hr and lately they are going about 3/4 hr per lb. oh well least it dont take long to cook them,
it sure was good, family ate it up and is gone now.
