Tip from fidel applied to flat iron steak

Had the flat iron at room temperature and sprinkled some raising the steak rub on both sides after patting it dry and rubbing a tad of evoo on both sides.
Put some Texas sweet onion on top and put into a plastic bag and let it set for one hour.
put down a cast iron grid and a raised grate on top of that with a veggie grill and cooked for four minutes at 650 degrees.
Then another four minutes with the cut up onions on top lettinng the onion juice drip down.
Remove and cover to rest for ten minutes.
Cut that bad boy up and enjoy.

Sides? What sides? Grilled corn in the husk.Romaine with red yellow and green peppers sliced up with feta,evoo and fresh oregano chopped up plus a tad of rice wine vinegar splashed on top of the greens.I just might get to be a part time guardian of a charcoal pit some where cookin something up. Thank you for the thumbs up.

I didn't see any comment from you...anyone, no offense taken (not that I would take offense - I'm pretty easy-going).
Steak looks great. I actually did mine in a cast iron skillet and the meat juices gave the onions an incredible flavor, and vice versa. Glad you enjoyed it.
