    You are all set then. You can guage a 'cure' by the feel of the meat. For this application, it should feel like a well done steak. Virtually no give when you push on it. So, the cure did it's thing in 5 days! ;) Let us know how it goes please! Want your feedback of this (being dried first) compared to what you did the last time. Please? Thanks! ;)

    Almost fried chicken and cornbread. Spring Hen said they might bring some sausage. This all at my dealer's demo Saturday. Chim-Chimney's in League City, TX. Other Eggheads are cooking other items, such as pies, cookies, etc. There will also be some of those other gas things being shown

    Too bad Photoegg will miss out, but he's taking his Bride out for the weekend.
