I have 9# pork butt and I recall you saying something about injecting with a vinegar solution. Can you please bring me up to date on what to use. I do have the injection tool.[p]Thanks,
Use Zesty Italian dressing, strain the dressing and add some of your rub ( make sure there are no large clumps).
Inject the pork Butt until it won't take anymore and cook as you would normally. I pull them off at 195º internal.
When you pull add some more rub and sauce if you like.
