Decided to give it a whirl. Started up the egg with spider in place and CI grid on the spider, regular grid at fire ring level. When dome temp stable at 450°, put a bone in rib eye on. Cooked it for about 9 minutes flipping every minute or two until internal temp was 90°. Lifted the whole grid off and set it on the adjustable rig sitting on my marble slab. Kicked the vent open all the way and removed the DFMT. When the dome temp reached 750°, about 6 minutes later, I dropped the steak down on the CI grid. Seared that bad boy for minute and a half a side, rotating the meat once per side. Pulled it and brought it inside. Internal temp 130°, a nice medium rare +. Best steak I've done in quite a while. I think it would have been better (a full medium rare) had I seared it only a minute/side. There were two steaks in the package, so I've got one more to achieve 'Reverse Sear' perfection!
