brisket question

I am doing my first brisket cook this weekend. the brisket is marinating as we speak and I will put it on Friday evening. My question is: Should I put it on the egg fat side down or up?

I go with down because a very famous egger told me so. I have good results this way. If anything gets stuck to the grid, it's fat, not bark. Good luck, Scott

Great post Scott. That famous egger is correct. Even if it doesn't get stuck to the grid, it's best to put the fat toward the hottest spot (on the egg the heat comes from below).

I cannot speak for those "famous eggers" but do what works for you. I know folks that cook fat down and fat up. Maybe try fat down for a couple of hours then fat up for the balance of the cook.
