When to rub?

I've made two butts, and I rubbed them both an hour or so before putting them on the egg. Does anyone rub them the day before? Will the flavor soak in more?[p]Thanks,[p]Ryan

    Ryan,
I have rubbed the night before, and also a couple hours before the cook. I could not tell a difference.[p]~nikki

    Ryan,
Yes, I am a mustard user. I like the better bark it gives the butts.[p]~nikki

    Ryan,
I made a ham the other day and rubbed it the night before with a pretty hot peppery rub. The rub penetrated thru the ham. A bit to hot (but I'm new at this also). I've also done hams where I've rubbed before throwing on the grill and the flavor didn't soak in so deep. If you want the extra flavor, rub the night before and seal up the meat in a plastic freezer bag - they sell large ones for that purpose.

Thanks!!!![p]I'm going to rub the butts first thing in the morning. That will give me around 7 hours before they hit the egg...[p]Thanks,[p]Ryan
