Did a test cook following FlaPoolMan's recipe with the only change that I had a small cut (2.5#) so with Pat's suggestion I cut down time to 1hr each side direct, and 3 ours in the tray. Other than that, followed it to the letter.
Our guests loved it, and the spousal units remark was: "Next time cook more so we have left overs".
The lil guy (3.5 yrs old) remarks: "we ate it all gone".
Enough said, awesome results.

We had the same prblem around here with a brisket, they inhale it. Great looking cook!

Just use an aluminum foil pan, and cover with alufoil again.
