I started a 2 inch thick pork loin yesterday using the recipe on the tenderquick web page.It says to cure for 3 - 5 days. I would like to smoke on Sunday which will be three days will that be enough or should I go longer?

    Thirdeye or Grandpa's Grub can answer that one.I have only used Hi Mountain Cure and it requires a soak and rest period.
