Frozen Butt

We bought two butts packaged together, cooked one and froze the other for a later cook, well it was my first one and I did not want to chance ruining two of them.

So my question is does anyone routinly freeze them and if so roughly guessing how long does it take to thaw and can it still be a little frozen when egged.

If they are tightly wrapped, I just throw them into the spa at 100F for and hour and half. depending on size. Works great for hot tube steaks an hour for them.

I generally buy butts by the case - 8 butts that was in cryovac pairs.

A pair of them will generally take 3-4 days minimum to thaw in the bottom of the fridge. A single butt will take 2-3 days. I'd give it 3 just to be safe.

I've cooked them even while still a little frozen internally and they come out fine.

Alrighty then. Looks like we are having ribs saturday instead of butt.
