My first really successful butt

The first 2 tries I lost the fire at least once during the cook, but the butts still turned out well.
This time I slept well, and woke up still with a fire. just pulled this 8lb butt at 197 after 17 hours. still had some coals, so threw on some wings and a Gorgonzola onion for later with the sandwiches.

Great looking cook there. Sure is a nice accessory to own, and the sleep doesn't hurt either.

Is that a medium or a small egg? I have a medium and always cook two when I cook them since they are so time intensive. I now use the Ziplock vacuum bag system to store the butt. It really works fantastic and I would recommend it to anyone.

It's a medium. I thought of trying 2 this time, but wasn't sure it would fit.
Next time I get the 2 pack at costco I'll try both. -

Perfection!! I can taste it from here. How long do you cook the onion for? Is it just s spanish onion or a vidalia?
