Vege. Help

Anyone out there got a favorite vegetarian recipe for the egg? My wife is (although I hate to admit it) a vegetarian. Although she may have her weak points the woman truly loves me. On valentines day I came home from work to find a present of two huge USDA prime porterhouse steaks (both for me) and a six pack of beer. As for the vegetables any help would be great.

In a cast iron pan/pot of any kind -- on top of "feet" which sit on plate setter, legs down...

Toss in a mixture of beets, potatoes, carrots, rutabaga... persnips...

Throw some herbs on top... Don't forget the S & P...

Baptize with OO -- toss together...

Roast @ 400F for about an hour... turning occasionally.

Oh, yeah! Even my wife eats this stuff, and she be fussy!

I did an artichoke bread pudding a while back that was mightyfine - I added oysters which you would obviously leave out.
