When you want/need to break the 500-degree barrier in the dome, daisy wheel on or off?

Off - then watch temps... put it on to control the burn... unless you're heading nuclear.
When you're just starting up the Egg, the dome temp will be misleading if you start with a good fire, as the thermometer is reading hotter than the dome really is.
Bring the dome itself up in temp [feel the outside]... and then you can trust the thermometer.
