Folks,
I've always wanted to ask, but I thought you'd all laugh at me. Now I've come to realize that you're going to laugh anyway.
So ...
When you decide to use wood chips for a "short" cook, do you add them right before the food or on ignition?
I have always assumed that adding them closest to cook time was best, but all that metal gets in the way.
I assume that on the long and slow cooks, you best spread throughout the bed, right?

If all I have are chips I'll add them before I light up. Allow the smoke to turn light blue then add what I'm cooking. On long cooks I will disperse them throughout the lump.
If it's a short cook then add them after an established fire and about 10 minutes before the food goes in. -
