I was at the end of one of my jars of preserved cayenne peppers, & thought I had enough for one more 2 egg fritatta, so I dumped the jar into the pan only to see it was much more than I thought. When I added the 2 beaten eggs, there was a pool of oil on top about 1/4 inch deep, far too much for the eggs to absorb. I took the finished pan to the trash & tilted it to drain off some of the oil, holding the fritatta in place with my fork.
