How does everyone cook for a large group of people and keep the food warm so it is as good as just off the grill when people are eating all during the game?

chaffing dishes are not expensive at Sams. we end up with 2 tables full of them

cool, No problem with food drying out? Do you add water or anything else?

I add chicken broth for the pork and beef broth or au jus for the beef. using half steamer trays you can just swap them out as they get low. some of the stuff I'll precook then reheat in food saver bags but 3 eggs will be going steady for a couple of days

we have a pot luck at my work place once a month, any suggestions on reheating beef?

depends on the type but usually just a little beef broth or au jus. It doesn't take much just enough to steam in when you reheat. about 1/4 cup in a half steamer tray.
