Did some leg quarters tonight. Three of them had Konriko Creole seasoning, and mine was DP Jamaican Firewalk. Yup, I was sweating while I was eating

:laugh: :laugh: haven't heard that expression " yardbird" since I was a grad assistant football coach in college in the mid 70's. We picked up a kid from Dallas Carter at the airport in OKC and asked if he was hungry. He said yes and we asked what he wanted. That was the first time I had heard the expression "yardbird". But he wanted "fried yardbird". I should have bought stock in Kentucky Fried Chicken!

That leg looks perfectly cooked. Haven't tried the Fire walk yet. So many rubs not enough meals.

See your still using quarters reather than parts! Color looks great but I think a little "Death pepper" would help you remember what "sweating" is all about!! :laugh: Cold there tonight Mike?

Yes, Ray--it's hot! I only put it on one of the four pieces, and my daughter kept asking me what was wrong when I was eating because I was sweating a lot.

Good old yardbird! JLOCKHART29 refers to chicken the same way as well. It was really good, and the kids ate it up with no problem at all.

You gotta try the Jamaican Firewalk! The burn is a lot different than any of the other seasonings I use, and it's got a really nice flavor to it, too!

Yup, you got me going with the quarters, and I haven't looked back since. Really keeps the meat nice and juicy, but still allows the skin to get crispy. I'm game for some death peppers--have a lot of respect for them after wrangling with the sampler you hooked me up with.
Speaking of cold...it's cold again today! Last day of work for the week, so I can just about see the finish line from here. Get some rest, and I'll catch up with you later.
