help with chicken wingettes

Go to the DizzyPig or the nakedwhiz site for the tutorials on wings. They are great sites for the eggers who are fairly new. good luck to ya. Tom

Done them a bunch of ways, but my favorite is simple:
- clean wing(ettes)
- place on grid in fridge for a couple hours - this helps dry the skin
- sprinkle with your favorite rub (Bad Byron's Butt Rub is mine)
- set up egg for a direct, but RAISED GRID, cook at 350. You can accompish this with a raised grid setup OR, but loading less lump. You want the grid a good 12-15 inces above the coals
- Cook for about an hour to 1.25 hrs, flipping every 20 minutes
I normally add a chunk of Pecan or Apple while the coals are heating up, adds a nice tough of smoke. Results in nicely crisp skin and very tender, fall off the bone meat. Good Luck!!
