butt has been at 179 for 4 hours?

i know that the butt will hit a temp stay yhere for a while may even go down a little then rise again my question is doesnt that usually come at a lower temp then 179? thanks for any help

    I`ve had em plateau at anywhere from 160° to 180°...I don`t know what temp your cooking at but I would say its safe at this point (after a 4 hour plateau) to raise your dome temp up to 250°-275° to help push it along..HTH[p]Wess

    thanks i have been cooking it since 8 pm pacific it is and has been around 240 for the last3-4 hours maybe it has done this because it was preinjected with the water/sodium/??? mixture

    If your pressed for time go ahead and kick it up a little...not sure about the preinjected thing..take it up to 195°-205° internal and you should be fine.[p]Wess

  • WessB, thanks for the info it is a guaranteed teder and moist butt that they injected full of water and who knows what else....let US make it tender and moist

    My last one was on Super Bowl Sunday. It stalled at 180 for several hours. I'd say you're doing great. If you need to speed things up a bit, go ahead, but it should be great just the way you are now.
