New pizza stone

I got a new Big Green Egg pizza stone. Do you have to season it before you use it or am I just ready to cook on it?

Pizza stones should not be seasoned. The bare stone is your cooking surface. Also, be sure not to use any soaps or chemicals to clean it. Just scrape any food off of it. The rest will burn off. Good luck!The Naked Whiz

Do I put the dough directly on it or put cornmeal down first?

I use parchment paper with good results, it makes it easy to prepare the pie on, and slides on and off the stone with ease.

I usually dust lightly with cornmeal before sliding the pizza on the stone.

Pam, if your stone is properly pre-heated, when the dough hits it it will immediately crisp up & pull away from the stone, there is no need for cornmeal on the stone; lightly dust the peel with cornmeal to aid the pie in sliding onto the stonehappy in the hut

I put cornmeal on the peel to help keep the dough from sticking on the peel. When I put the pie on the stone, of course, some of the corn meal is going to get on the stone, but I don't deliberately put any corn meal on the stone. If you preheat the stone properly and if the dough isn't way too wet, the dough will not stick to the stone after the pie is done. Good luck!The Naked Whiz
