Ping Max . . . upside down turkey?
A couple weeks ago I caught the American Test Kitchen show (whatever its called) just as they were icing the turkey for a test. They liked that idea. But the other thing they did was to cook the bird with the breast down for part of the cook, thereby better controlling the overcooking of the breast meat.
Ever try it? Any thoughts even if you haven't?
