Bought a 4 lb bone out Prime (choice) Rib for dinner and planning a reverse sear this time. Looked at a few recipes, and didn't really see any recomendations for wood chunks. I have Oak, Hickory and Mesquite to choose from (I'm not going to consider the Maple and Apple options for this one :) )

Rubbed with crushed garlic and chopped fresh rosemary for now, will add kosher salt and coarse pepper about 15 minutes prior. I'm leaning towards the Oak, with Mesquite second, but wide open to opinions and reasoning.
