Tri Tip reverse sear question
Smokin Tiger
Posts: 352
I have a couple of Tri Tips I plan to cook tonight. I have cooked several in the past using the TRex method. I was thinking about trying the reverse sear method for these. What temp do you cook them to before the final sear? Any recommended rest period prior to the sear or do I just wait until my egg hits searing temps?
Thanks in advance.
Thanks in advance.

I have cooked many steaks this way at 275 on a raised grid till the internal temperature gets to 125/130 then sear at nuke temps for 90 seconds per side for medium rare.

Thanks! I will give it a shot tonight and let you know how it turns out.

I let mine rest for fifteen minutes and then put back on to sear.

Just finished the Tri Tip. Pulled it at 120 and let it rest 15 minutes while the egg warmed up and put it on for the sear. Turned out pretty good. Not quite as pink in the middle as usual, but disappeared off the platter really fast!
Thanks again for the advice.
