In case anybody is interested, here is a recipe for coleslaw. I've never tried it, but will tomorrow. I got this from another BBQ website over a year ago. It's the recipe (so I'm told) that Corkys in Memphis uses. The guy I got it from says it's perfect. Try it, and you be the judge.
Corkys Coleslaw[p]1 Medium Head of green cabbage - Shredded
2 Medium carrots - Grated
1 Medium green bell pepper - Finely diced
2 Tablespoons onion - Grated
2 Cups Mayonnaise
3/4 cup sugar
1/4 cup dijon mustard
1/4 cup cider vinegar
2 Tablespoons celery seeds
1 Teaspoon salt (I recommend kosher or sea)
1/8 Teaspoon white pepper[p]Mix vegetables in a bowl. Mix remaining ingredients in another. Then mix together and toss well. Cover and refrigerate 3-4 hours.[p]ENJOY!!!
