A few weeks ago a neighbor did a filet mignon (fixed on a gas grill) that was pretty good. Did it tonight on the Egg and it was terrific. Maybe I'm just tired of poultry??[p]Here goes--
Marinate (for 1-2 hours) 2"-thick filets in the following:
Juice of 1/2 lime per steak (fresh limes!)
1 garlic clove per steak, minced fine
Just before putting on grill, coat one side with garlic powder and pepper.
Put steak on grill, seasoned-side down, sprinkle garlic powder and pepper on top side. Leave for 1-1/2 minutes at HOT with vents wide open. Open carefully.
Turn, grill for another 1-1/2 minutes with top down, vents open. Open carefully.
Turn, close vents and wait 2 minutes.
Open vents, lift lid about an inch for a few seconds, then open and remove steak.
This was great.
(sorry for repeating the "open carefully" stuff, I'm committed to regrowing my eyebrows).
