Wierd brisket flat cook

Started a 5.76 lb flat last night at 10:30pm. It's 1pm and the darn thing is just at 173 internal. Cooking at 235 grid temp. Looks like this is gonna be one of those briskets cooks.


  • If 235 is grid temp, what is the dome temp on your egg?
  • It was about 275. It ended up taking about 17 hours total. Turned out great, but the time was surprising. I usually get 'em done in 10 to 12 hours.
