Here is one.
Slaw, Chipotle, Cowgirl, Rick's Tropical Delight
it's quick and it's easy and it's good...
INGREDIENTS:
1/2 cup mayo or salad dressing
1 chipotle pepper in adobo sauce (more if you like)
dash of salt to taste
minced onion
squeeze of fresh lime juice
1 bag of shredded cole slaw cabbage
Mix and chill
Procedure:
1 I use 1/2 teaspoon of my ground chipotles from last year in a double batch of the slaw and it's just about right
Recipe Type

Slaw, Pineapple, BigMista's
Smokey,Looks good, I've always liked salads with grapefruit or Mandarin orange slices. Here is a pineapple slaw that is tasty too. It's really good with Chinese stick ribs or barbecued pork.~thrideye~
1 head cabbage, shredded
1 can pineapple chunks (SAVE THE JUICE)
1/2 cup apple cider vinegar
1 Tbs blackpepper
1 Tbs salt
1 Tbs brown sugar
Put the cabbage in a bowl. Add the pineapple (I like to give it a rough chop first). Mix the vinegar with 1/4 cup of the pineapple juice. Add the rest of the ingredients and mix well. Pour over the cabbage and pineapple. Toss. Eat.

Here's the one I use, courtesy of The Food Network:
Sweet and Spicy Coleslaw Recipe courtesy The Neelys
2 pounds green cabbage
4 carrots
1 medium yellow onion
1/2 cup mayonnaise
1/4 cup mustard
2 teaspoons apple cider vinegar
1 cup sugar
1 teaspoon black pepper
1/2 teaspoon cayenne
Salt and freshly ground black pepper
Cut cabbage in quarters and remove core. Peel carrots and onion and cut into pieces that would fit through the feed tube of a food processor. Fit food processor with the large-holed grater attachment and push cabbage, carrots, and onions through feed tube to grate. In a large bowl, toss vegetables together.
In another medium bowl, prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, black pepper, and cayenne. Toss dressing with the cabbage mixture, and season with salt and pepper, to taste. Cover with plastic wrap and chill for at least 2 hours before serving.
