There are some other threads attached to this 7-18 post you might want to look at as well. This thread talks of cooking in an oven, but I use my BGE with a small grill resting on a pan of boiling water with a T of Tarragon leaves floating in it for aroma. I cook at 350° dome 155° internal. A 1" salmon steak this way runs about 50-55 minutes.
