First Brisket

Gotta tell ya' this brisket was fabulous. Did what could have been a dumb thing. Tried my first ever brisket and invited two other families to dinner at about 6:00. Then spent the day wondering if I would have to do some emergency burgers when I took this thing off the egg. Not so..., it went just the way y'all said it would and was perfect...tender...moist....great flavor. I put a roughly 5 pound flat on at 9:00 am at 250 with the usual assortment of hardware. Was at about 192 at 5:00 pm and very tender. Wrapped in foil and a towel until slicing at about 6:30. Mmmmm
