chicken skin/butter or olive oil
My guest will arrive tomorrow, I'm doing Brant's Beer Butt Chicken, the recipe calls for butter on the skin, will olive oil work as well???[p]Thanks,
Yes, I remove the skin anyway before carving but either will work just fine.[p]Tim

Tim M, You have waaaay more resolve than me! If there's crispy skin on a bird, I'm eatin' it! That's why I just start out boneless/skinless whenever possible.... How can you smell that flavourful, crackley skin and then turf it in the trash? I've got some willpower, but that's just inhuman!
Why do you oil or butter the skin if you are just gonna remove it later? [p]Curious
South O,[p]Presentation. It looks good. It doesn't take that much effort actually. I am not saying you have to, I try to cut back on calories where I can. [p]Tim
Add some olive oil and chopped garlic along with whatever herbs and/or rub you enjoy UNDER the skin. Then add a bit more to the outside and you really have a treat. Nice and brown and so much flavor I'm surprised it's not illegal.
