Carolina/Vinegar based BBQ sauce?

I am looking for a good Carolina/Vinegar Style BBQ sauce for pork sandwiches.I have found several recipes on the internet but none of them have been very good. Any suggestions?

The Carolina's are a crossroads of sorts of sauces and flavors. Here is a Basic Eastern North Carolina sauce that I have always liked. Some call for a higher proportion of vinegar to water, but this is a good starting place to test the taste buds. Can be used as a basting sauce as well as a table sauce on pulled or chopped barbecued pork.
1/2 Cup Water
1 Cup Cider Vinegar
2 t Salt (try sea salt)
1-1/2 t Cayenne Pepper
1/2 t Black Pepper
Warm the base so that the salt & peppers can blend in evenly.
If it's a little tart, you can mellow it with some apple cider or apple juice, but the flavors on the finished meat is different from sampling right after mixing. I use a shaker bottle on the pit and the table both.Happy Trails~thirdeye~Barbecue is not rocket surgery -
Thanks. I think I have only been using the white vinegar and not the apple cider. I will give it a try.

Ohhhhh yeech!!
Never ever use white vinegar for anything but cleaning a coffee pot...
Eastern NC BBQ always uses Apple Cider Vinegar..
I'd give you mine, but I'd probably die in a hail of lead... :woohoo:

I have one down that I like a lot. The one posted is on the right track. I read a ton of the recipes off this site

and played with them until I found what I like.
Be sure to write it down once you got it.
That is my problem, I just add stuff. I haven't written down an actually recipe for my sauce yet. Hope I remember it, I will be making about a quart of it this weekend. :woohoo: -
Western NC from AZRP.
For ribs and chicken I use Blueshog but for pulled pork I like this Western Carolina sauce. -RP
1 qt cider vinegar
6 oz yellow mustard
¼ lb butter
¾ T salt
½ T black pepper
½ T cayenne
Juice of ½ lemon
½ t sugar
32 oz catsup
Cook at a simmer for 10 minutes. -

1 cup cider vinegar
1 cup coke
3 chipotles
put that in a blender, blend till smooth
put in a pot, add:
2 tablespoons sugar
1 tablespoon mustard powder
1 teaspoon crushed red peppers
1 teaspoon sea salt
1/2 teaspoon celery salt
couple turns of the pepper grinder
simmer for about 15 mins.
and enjoy
