Prepped last night... B)

Up at 5:30 this a.m... :ohmy: Fire established by 6:30... :)

40 lbs of pork loin roulade [stuffed with Italian sausage,a little bacon, herbs, cheese] roasted in shifts on my Medium. Served @ 11 for a sit-down dinner for 90. :silly: :lol: :silly:

Then, another 15 lbs served up for a different group @ 4 pm... :pinch: :S :pinch:

    That is a lot of cooking on that medium of yours. Do you use your small at all?

    Thanks for the instructions you sent. After looking at thireyes response to another post I was cooking tenderloin. I ended up over cooking the first one. The end of this next week I will try another.
