Spare Ribs

Couldn't get any better. Today was spare ribs, smoked. Fired up the grill after soaking hickory chips in water. Sprinkled them on top of charcoal. As soon as it reached 350 I plopped those babies on. Closed the lid and waited for it to reach 350 again. Then turned them over and applied the barbaque sauce. Closed lid and again waited till it reached 300. Then flipped them again and placed sauce on second side. Cooked one more minute and flipped again adding more sauce. One more time flipped again and added more sauce. Let cook one more minute and they were done to perfection. End on bones were burnt to perfection. Good and brown. With the small pile of hickory chips in the middle only (where fire is started) gave the ribs just a faint taste of hickory. First time is the charm. Man they tasted good. Looked good. Should of took a photo of these. I've always been a great griller. But this grill beats all. Still waiting to make my first Pizza and Turkey and Bread. Steve.
