Three full days of egging - what could be better?
Yesterday: Pretty simple, just 24 ABTs stuffed with pulled pork and cream cheese, followed by smoked sausages. Had 6 friends & neighbors over to share. (Note to Spring Chicken - two were Ragin' Cajun LSU grads).
Today: Pulled pork enchiladas (pork already cooked and pulled as above) with green chile sauce. Green chiles already roasted and peeled.
Tomorrow: An all-seafood day. Mexican shrimp cocktail, followed by bacon-wrapped seared scallops with honey lime sauce and sesame-encrusted tuna steaks. Will probably have some seasoned rice on the side.
