I too will be doing a boston butt on the BEG for Sunday, what is the rule of thumb for hours per pound? Also how long can a butt be wrapped in al Foil and a towel and place in a cooler? What is the temperature you monitor for in the cooler? our guest are coming to eat at 5 and i would like to have all in place at that time.
Thanks,

You can hold a butt at least 5 hours in a cooler wrapped in foil and towels and have the butt temp stay above 140 degrees. In my experiment that I document on my web page, after 8 hours, the butt was down to 125. It was very tasty.
You can probably expect anywhere from 1.5 to 2.5 hours per pound for an 8 pound butt, depending on what temp you cook it at. Good luck! The Naked Whiz
