8# pork shoulder..which side up?

Doing a 2 level cook, with 8# brisket on bottom on lge BGE with 8# pork shoulder on top on extended rack..Should fat side of pk shoulder be up ordown? Thanks...P.S. I have fat side of this flat brisket down.

    Many of us trim the fat cap off substantially to increase the bark, as there is plenty of collagen in the butt to keep things moist.

    I love answering these cuzz you'll get about 50/50 responses every time..I always leave the fat cap on and cook fat cap up... :unsure: :woohoo:
