Venison Ham Questions

Yes, it looks like I'm in charge of cooking a couple Venison Hams for the 4th. I cooked a back strap before but I'm not sure how to handle time, temp & smoke on this one. So I have some questions hope you can help.
How does Venison handle smoke? I'm thinking of adding some apple or Peach to the fire.
Does the temp follow normal beef temps (i.e., med. rare, medium, etc.)? :S
