I wanted to try my recently acquired egg with Prime ribs roast. I have decided otherwise and sliced the roast in steaks. 2 inches thick. My wife thought I made a mistake... Cranked my egg to 650 F. couldn't go higher (anybody have ideas; big hardwood chunk, center lighting from bottom, blew in bottom air door... 650F maxed).
4 min one side, 4 min flipped, 4 min closed vent.
Medium well !
My daughter : 'Mom ! come and taste, it is the best steak I have ever had in my life'
Indeed...

1.] The egg needs to be super clean to get to super high temps, this means removing the fire ring and firebox and getting all the accumulated ash out.
2.] Are you sure your thermometer is correctly calibrated?

J,
My egg cleaned not vacuum cleaned but firebox air holes cleaned, and no ash under firebox. Calibration ? shows 70F cool when 70F outside. Do you have a FAQ for calibration ? -
Another egger has been kind enough to provide all the info you could ever wish, here are some specific links to his site, but the whole site is a wealth of info...
