c'mon people, i know somebody has to have a good recipe on the smoked turkey legs, i'm soaking them in a brine right now. i was thinkin around 300deg. until i reach the 180 mark, should i cook them on indirect heat or direct? should i wrap in foil? any help would be great :) i will use some apple chips or mesquite.

Don't use mesquite for smoke, it is way to bitter for poultry. -RP

I chopped up this bird and kept the parts seperate. Buttermilk for a couple hours, seasoning, indirect at 325 until done. Unless you really like mesquite, your in for trouble. Poultry soaks up the wood flavor quick.
Small amout of apple should work.
