Tonight's Dinner- Culotte Steak & Artichoke

Decided I deserve some beef tonight. Culotte Steak, spiced with coarse sea salt & fresh cracked ground black pepper:
Starting at the atomic temperature:
Ahhhh...the grill marks:
And the Artichokes, after steamed for forty minutes, drizzled with EVOO, sea salt and ground pepper:
Artichokes seared for five minutes:
The final product...I had rice, the wife had smashed potatoes:
Couldn't resist a bottle of Sangiovesse from the Sierra Foothills:
Think Kodak deserves some of tonight's cook?:
What about Hannah?:

I am glad you posted pictures of these. I have been curious about them for a while and those are beautifully marbled. Here's what Morgan Ranch says. "Removed from the top of the Sirloin, our Morgan Ranch Wagyu Coulette is one of our hands-down favorites. Each bite offers the opportunity to savor the sweetness and flavor of the meat, complimented by a smooth mouthfeel, texture and juiciness." It sounds good and those look great. Where did you buy them? I am sure Wagyu is great, but the prices are a little too high for my taste.

My little Hannah, I didn't realize how old she looks in the pictures. She's around 10. Thanks for asking. BTW...the CI grate is awesome.

I consider a culotte as a Tri-Tip, cut into steaks, but others might think different. Either way, very good cut of meat.

Don't take this the wrong way, but here on the good old USA, we call it one good chunk of meat.

"skirt" is what the french cook, "pants" are what Americans cook...I'll let you finish the rest.

I picked them up at the local grocery store. Kinda reminds me of a cross between a NY steak and a sirlion...if there is such a thing. Any how, they came out really good.
