Well after my first attempt
, I decided to give it one more try just to make sure.
I got some buffalo NY strips, and decided to hot tub them. In my first try I only used pepper and the result was OK-ish. Tonight however with the buffalo I used Cowlick, and coated with olive oil, after which they all took a nice long bath (in a ziplock bag) 100F for one hour.
I cooked them at 700 to everyones liking @ 2 min each side for me for medium rare. Made some corn on the cob and some green onion redchili butter (Bobby Flay) and some taters, and it was YUMMIE. It was so good, didn;t even take pictures.
