Thank you Gordon for the saying "Life is good". Life is good, because I got a full night sleep while a whole picnic was quing outside. No need to tend the fire last night. Last night it was pegged at 250. This morning at 2:30 it was at 250. (The wife was up doing genealogy, and she is a night owl) When I got up it was at 235. I am taking this one to an internal temp of 210 and then let it go for another hour. (This idea came from Cook's Illustrated) This is the second time I doing this. The first attempt turn out to have less fat and connective tissuse, very tender, and tasted very good.
Life is good because of this country we live in. My thanks to everyone for making this the only place I want to live. Now go out and enjoy this day.
