Started a 8# butt around 7pm last night ago. Egg seemed to be stabilized at 240 dome before heading off to bed at 11 with steadily climbing meat temp at 130. Around 5:30 this morning, meat dropped to 123 with dome temp about 190. Fire was still going but pretty weak. Got fire back going around 300-325. Bringing temp down now to 250 with meat at 165. With the unfortunate stall and now change in temps, how concerned should I be with any meat safety. Will the butt go through plateau and slow down a bit more? Plan on pulling around 190-195 as I've done before. Thanks for any help -

Unless you know how long the butt was below 140, I'd say to be conservative and toss the butt.The Naked Whiz
