I have not wrapped a butt and placed it in a cooler before so I was wondering if the cooler should have ice in it or not?

No, you actually want the butt to hold heat and slowly cool allowing the juices to redistribute.

Not sure if it is finished yet. the temp has been sitting between 195 and 197 for the last couple of hours. I programed for 18 hours and still has 5 and half hours to go so I am letting it stay on the grill.

Any thoughts

No ice. Actually if you want to extend the time before pulling. You can put a layer of towels on the bottom add a layer of foil, then the wrapped butt(s). and another layer or two of towels. This way butts will stay in the safe zone for up to 4-5 hours.
