Cooking Pizza - get to 600 degrees - open the lid and it's a steady unstoppable decline sown to 300 - what to do???

    Close the lid and make sure the vents are in the same spot as when you opened it and the temp should come back quickly.

    The thermometer won't register temps accurately with the lid open.

    Keep lid closed and peak down the top vent CAREFULLY(with a mirror if needed). I usually close mine up and cook for 20 min at 525-550 dome and pizza at felt level. probably quicker at your temp.

    That'll happen in the early stages of raising the temp. up high like that, especially with new lump. Next time give it plenty of time to stabilize at your desired temp. The gasses build up during the heating up stage, especially if you are using a heat deflector like the plate setter, and can even cause a flashback.......no fun! :ohmy:
