About 250 dome (thermometer temp)
1 1/2 - 2 hours per pound.
Go to 200 degrees on the meet
You will hit a plateau where it will sit around 150-170 and it could sit there for 2-3 hours. That is fine. It will rise when it's ready. -
Have you checked out these 2 links yet?

I've heard things about a drip pan with water and apple juice...do you think that's necessary?
Thanks! -
