I'm batching it tonight so I thought I'd experiment for Oklahoma. Won't have a plate setter and want to make "the" chicken. Just used some foil for a barrier and I think it will work. -RP

Did 24 tonight using the rack you showed me in Ocala. Made wings & your shrimp last night then grabbed 2 doz. legs for tonight. Cooked at 350 indirect for 2 hrs with the wings & the neighbors loved them (sorry no shrimp for them ) The legs tonight also indirect went closer to 3 hrs. but no pic's of the cook. Give me a min & I'll show whats left :( :( :( . Your shrimp recipe is great. Give me a sec. to eat before I wrap the last 4. (4 without sauce already saved for Mrs. Pool) And I'll post the leftovers.
Never mind, Here's the last 4 of 24 but did sauce these. Thanks for the advice on the rack, I bought 2.

Sorry they were all direct on raised grid with leg rack on top. barely cleared the dome they were so high.

Looking good Pat, those racks are great, I use them all the time. They make is so much eazier to cook wings and drums. Love how they crisp up. Also lets try to set a date for a cook out here and you the wife come on out.
