Leftover Thighs

I EGG'd some chicken thighs Thur. (one of my favs.)
Flavor profile; marinade of ketchup, mustard, oil, lemon juice,apple cider vinager, salt pepper.
Cooked 325 for 20-25 mins with Tsunami spin.
I have a few left over and with this sweet/sour flavor, I am looking for suggestions an a leftover creation..
Any suggestions are requested.

    Salad, Chicken, Ole Man Jim's Q-Fest Smoked


    INGREDIENTS:
    3 Smoked leg quarters, chopped
    Course
    1/2 Granny Smith Apple chopped
    medium
    1/2 cup Chopped pecans
    1 Rib celery, finely sliced
    Hellmann's Mayonaise, enough
    To bind



    Procedure:
    1 Combine all ingrediants adding only enough mayo to bind. As a light lunchen entree, serve over 1/2 of a ripe alvacado.
