Wow what a day at work! Came home later then I thought and my wife will be home in n40 minutes. Got the BGE fired up at 350. I only have 1 slab of St. Louis style ribs. Can I cook over direct heat and if so, for how long? Or should I use the plate setter?Too late for low and slow. Any suggestions?

Cook something else.
Save that slab of rib till you have the time to cook them properly. 40 minutes isn't enough time to get a bone hot. -
You're right! What was I thinking...must be experiencing BGE withdrawl syndrome. Thanks for the advise!
